We often assume that you have access to a Chinese supermarket for these dishes. But what if you don't, and you don't feel like buying stuff online? There's still some dishes here that're available to you! I've assumed that you can get ginger and a decent soy sauce (a Japanese soy sauce like Kikkoman isn't the same but would work in a pinch). Many of these also use liaojiu - i.e. Shaoxing wine - so you can sub that with dry sherry or even white wine/sake if needed.
Sichuan food is one of the most popular cuisines around the world, and for good reason - it's diverse, boldly flavored, and has got a lot of depth. This cuisine is for more than just chili heads though... there's over 15 different flavor profiles within Sichuan food, and with time we'll try to get through them all.

Northeastern Chinese Cuisine is one of our favorites and criminally underrated. Given that the cuisines share a bit of overlap in some dishes and technqiues, we've included the food of Beijing and the Northeast together for this playlist until we have enough to split them apart.
So while we usually don't focus on vegetarian food, there's plenty of Chinese dishes that are vegetarian as-is. There's some other videos that we didn't include in this playlist that could very easily be turned vegetarian, so feel free to ask us questions!
Dim Sum's a meal that's beloved by... everyone. Primarily a restaurant thing, word of warning that these are some of the most involved recipes on this channel - Dim Sum dishes are a level of complexity that other cuisines seem to reserve for festival foods :) But even if you don't end up making these, hopefully you can still learn something and at least have a bit of appreciation of all the hard work that goes into it!
