Many Noodles recipe call for Baking soda, but that ingredient is not strong enough to make Ramen noodles and their very distinctive chewiness and springiness. Baked Baking Soda can solve that problem. If you don't have a pasta machine, place the ramen noodles dough into a solid plastic bag and stamp it with your feet.
