knead it by hand for a couple minutes on the countertop

divide it into three roughly equal pieces

roll out the different parts of the sombrero

cutting it into a shape as closely resembling a circle as possible

cutting out a circle in the center

let it cool on a wire rack for about another hour

dump out any excess oil

add a big ol pinch of kosher salt
