Medium Acidity, Juicy Body. Known for high quality, high innovation, and a high price tag, coffee from Costa Rica looks very different from coffee elsewhere. Not only does Costa Rica have broad initiatives that impact quality of life, like universal healthcare and education, but it regulates coffee production with a minimum wage for farm workers and pricing regulations. Having these regulations in place for the coffee industry in Costa Rica may raise prices for consumers, but they also ensure that farms are able to operate with stability and reinvest in their own coffee quality. Producers and mills stake more in experimental processing, high-quality cultivars, harvesting at ideal ripeness, and long-term infrastructure. Agroforestry has been the standard practice for decades—in 1996, Costa Rica halted and began reversing deforestation countrywide. This coffee from Montano Micro-Mill also invests in direct sustainability efforts: a portion of every bag sold helps protect the local endangered Panthera onca (Jaguar) population through a partnership with the Fundación Pro Zoológicos. Showcasing these traits of the Costa Rican coffee landscape, this lot was handpicked at an ideal ripeness to fuel the fermentation process; it was pulped and set to ferment, mucilage intact, in airtight tanks. Following the ferment, the greens were dried to ideal humidity and rested. The resulting cup profile is rich in complexity with lactic and malic acidity.

Region: Guji, Ethiopia Farm: Sibu Coffee Process: Washed Variety: Typica Altitude: 1,900 - 2,100 MASL We Taste: Peach, Honey, Jasmine. Medium Acidity, Floral Finish. Guji is found in the south of Ethiopia, bordering renowned coffee regions of Sidama and Yirgacheffe (in Gedeo). It was protected from most tourism and development until it was distinguished as its own political zone in 2002, and for good reason: Guji is carpeted in lush, green forests with mineral-rich soils and many localized landrace varieties of indigenous coffee. For the past twenty years, the founders of Sibu Coffee have been building and establishing new washing stations in the region for local farming families—Guracho Washing Station included. Sibu Coffee Exporter began operations in 2014 to improve access to the export market for these washing stations and the farmers who use them. With more direct access to global trade, producers fetch higher prices in the specialty market than they would in the volume-focused commodity market. In addition to facilitating this local commercial development, Sibu also works to reinvest in community growth. They invested in renovating a local school in 2019, donating two shipping containers of school supplies, and building a fresh water supply for the local area. Embodying that long-term commitment to quality and resource infrastructure, this coffee is a simple washed process Typica showcasing its own rich terroir and that delicious, classic, and clean profile of fruit and floral tea.
